food processing & Irradiation
Almost all food is processed in
one way or another. Processing exposes foods to heat,
light, oxygen,
or drastic
changes in temperature or humidity. This exposure causes the
destruction of vital but fragile nutrients.
The greater the level of processing, the more
nutrients are
denatured. Examples of processing include cooking,
milling, grinding, recombining, etc.
Many fresh foods are irradiated
(gamma rays, x-rays or microwaves)
to extend their shelf life by
destruction of micro-organisms,
inhibition of sprouting, and delay of ripening.
Irradiation affects vital
nutrients, especially antioxidants and
fat-soluble vitamins, which may be destroyed.
The food processing
industry is fighting the requirement to label
irradiated food. |
